I have copied a few of the images that I have used (or plan to use) and copied them onto our server.
  • RaspBMC  This will install XBMC on the RasPi.  It makes the Raspi a Media Server and looks pretty cool.
  • Arch Linux  This is the image used to make the RasPi a file server.
  • Wheezy Raspbian  This image gives you a basic, PC style computer setup.

I tried both OS's but I like RaspBMC best.  The only thing, after about 10 mins it locks up and I have to reboot...   Undecided

I guess for running things on the balloon, Arch will probally work best.  It boots up fairly fast and doesn't seem to have a lot of stuff running in the background.

You are probably right, but I am using Wheezy for development, for now, because of the graffical interface.  Eventually, I may migrate to Arch.
